6 Creative Snacks for an Office Brunch

Hosting an office brunch and need some snack ideas? Check out these six creative snacks that are easy to make and fun to eat!

1. French Toast Bites

Cook Time: 30 min

Take a half loaf of French Bread and cut it up into small slices. Melt a ½ cup of butter and stir it with a cup of brown sugar. Pour this mixture in an oven-safe casserole dish. Lay out the sliced bread on top of the mixture. Mix together 6 eggs, 2 cups of milk, 2 tsp. of cinnamon and 2 tsp. of vanilla extract. Pour this mixture on top of the sliced bread. Pop the casserole dish in the oven for 25-30 minutes at 350 degrees. Remove the casserole from the oven, sprinkle powdered sugar on top and recut the slices so they are easily accessible.

This recipe is easily made in just 40 minutes and is delicious with or without syrup!

2. Baked Eggs in Avocado

Serving size varies; the following recipe serves 2.

Carefully crack two small eggs in a medium bowl, not puncturing the yolks. Cut an avocado in half and remove the seed from the center. If the avocado’s pit hole is not big enough for one egg, scoop a small amount out until the size matches the egg. Place the avocado halves on a baking sheet and scoop the yolks out of the bowl into each avocado hole. Fill the remainder of the hole with leftover egg whites from the cracked eggs. Add pepper and salt on top of each egg for taste. Place in the oven at 425 degrees for 15 minutes. Remove from the oven and add crumbled bacon on top of each avocado half.

3. Mini Breakfast Quiche

This recipe makes 18 small muffins.

In a large bowl, wisp together 12 eggs, ½ cup heavy cream, ¼ cup milk, 2 tbsp. chopped parsley, 2 tbsp. chopped basil, ¼ tsp. salt and ¼ tsp. pepper. Add 1 cup of chopped broccoli, 1 cup of chopped spinach, 1 chopped red bell pepper, ½ cup diced onion and 1 diced jalapeno pepper to the mixture. You can also add 1 and a ½ cup of cheddar cheese and 1 lb. of fully cooked chopped sausage to the mixture. Mix everything together and scoop the mixture into a thoroughly greased muffin tin. Bake for 20-25 minutes at 375 degrees. Remove from the oven and let it cool for 10 minutes.

This recipe is versatile! You can add any type of veggies, cheese or meat that you choose.

4. Strawberry & Pancake Bites

Prep Time: 10 min after pancakes are made

Pancakes:

Mix together 1 and ½ cup of flour, 3 tbsp. of sugar, 1 and ½ cup of baking powder, ½ tsp. of salt and ¼ tsp. of baking soda in a bowl. In a separate bowl, mix 1 cup of milk, 4 tbsp. of melted butter and 1 egg together. Add both mixtures together and wisp. On a nonstick skillet, add a small amount of batter on medium-low heat for 4 minutes. Flip the pancake, cook for another 2-4 minutes and remove from the skillet. Do this for as many small pancakes as desired.

Bites:

Spread a small amount of whipped cream on a small pancake. Place a thin slice of strawberry on top of the pancake. Add another small pancake on top, with whipped cream and another thin slice of strawberry. Top off with a pancake and poke a skewer through the top.

This is a fun and delicious snack that can be eaten with or without syrup!

5. Apple Bagel

Each apple makes 2 servings.

Cut ½ inch from the top and bottom of an apple and discard it. Cut the remainder of the apple into 4 horizontal slices and remove the seeds. Spread one apple slice with creamy peanut butter on the top. Sprinkle granola or chopped walnuts on the peanut butter. Place another apple slice on top.

6. Almond Butter Granola Bars

Heat 1 cup of almond butter and ¾ cup raw honey in a saucepan on low heat until melted. Stir and then remove from heat. Pour this mixture over 3 cups of old fashioned oats in a large bowl and stir. Pour and press this mixture into a 9-inch baking pan and bake at 350 degrees for 15 minutes. Remove and let cool for 10 minutes.

This snack is healthy and fun for the whole office to enjoy!
